PAYS d'OC

Smooth and easy to drink, full bodied with medium acidity and medium to high tannins. The flavor profile leads with fruit (blackcurrant, blackberry jam, plum, black cherry) followed by nutmeg, black tea, and oak notes. The finish is long and lingering.

Bright ruby in hue with ripe red cherry aromas. Absolutely bursts on the palate. Supple, silky tannins combined with an abundance of juicy fresh, ripe, and tart fruit. It manages to be ripe without being a fruit bomb with pleasant acidity.

Pinot Noir usually hates being blended, so it’s famously a soloist. It’s also stubborn – têtu –, about where it will reveal its unique cherry-and-raspberry flavours. Before us, no one thought of planting it in our ancient, high altitude vineyards...
