Excellent balance and great finesse. Delicate appleand lemon characters, soft and fresh on the palate, with citrus and fresh honey characters on a long finish. It is well-balanced with little acidity-an elegant and very complex wine.
Wine Spectator 93 points - This shows a sense of grace and balance that belies its complexity and sophistication. Delicate brioche and apple aromas lead to long and sleek flavors of spicy hazelnut, lemon and ginger that finish with an impeccably crisp mineral note. Drink now through 2016. 3,259 cases made.-TF  (Dec 15 2014)

Fine tiny bubbles and a long lasting mousse are the usual footprints of the L'Ermitage cuvée. This cuvée is showing great notes of "tarte tatin": baked apples and buttery crust, with notes of apricot and delicate vanilla bean. The mouthfeel is creamy, expresses flavors of quince and bread crust, with a clean and crisp yet long finish.
Wine maker notes
Roederer Estate wines are made with just the cuvée pressing; no première ordeuxième taille is used. The wines for the dosage and disgorging liquor added to the L’Ermitage were chosen from five different wines to find the best balance and complexity. As with previous vintages, the blend is specially crafted to increase the wine’s ability to age. After disgorging, the L’Ermitage is aged at least six months in the bottle before release.

Food pairing
L’Ermitage suits wonderfully with chicken and cream sauces, smoked salmon and crab, as well as fettucine with prawns in a sparkling butter sauce.
